I usually go to the Eastern Market on Saturdays. It’s Detroit’s Farmers Market. I’ve been going since I was very young. I’ve always enjoyed talking and learning from the farmer’s. The aromas from the fresh fruit and flowers are intoxicating.
When I come home I always try to use the fresh produce right away. One meal that has been a staple at our home this summer is fried corn. I have a really easy recipe to use all the ears of corn I buy from the market. I usually get 12 ears of corn for $1.00! The corn is so sweet and fresh and with only 3 ingredients anyone can make it.
Fried Corn Recipe
Ingredients
6 Ears of Corn Husked & Cleaned
6 Slices of Bacon
1 Medium Onion
Directions:
- Slice corn off of cob and scrape cob to release the milk. Set aside.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
- Retain 2 tablespoons of the bacon grease in the pan and fry onion until just softened. Add the corn and cook until tender. Stir in the crumbled bacon and cook 1 minute more.








sounds wonderful… I use beef or turkey bacon but I think it would still work…. I will have to try your recipe after Farmer’s market this week (our’s is on Thursday…)

Because I have learned to eat more healthy I am going to try to find a way to make this recipe a bit healthier so I can try it because I think the ingredients sound like they would taste really good together. Maybe instead of frying in bacon grease I could use pan spray and cook up the corn and onions that way and then add the pre-cooked bacon I make in the microwave. I hope it will be as good as you describe your recipe!! Considering it is January, I will have to wait a few months to be able to get fresh corn, but I will write this down and save it.
