I love to cook, but most weeknights I don’t have time to cook like I used to before the kids. These days I’m pretty busy, and I’m always going, going, going. My days are filled with work, lots of writing, and running all over Los Angeles to get the kids to school, practice and play dates. My evenings are filled with helping with homework, laundry, cleaning, more writing, football and basketball games and family time. At the end of the day, the last thing I want to do is stand in front of the stove cooking.
On these nights I prefer a quick and easy recipe that doesn’t require a lot of ingredients. I have some go to meals that are quick and easy like lasagna, enchiladas and tacos, but those even require some prep work. My husband took the kids to a movie yesterday, so I decided to try the Marsala with Mushrooms & Garlic for dinner. I used chicken and pasta, but the sauces can be made with any protein, starch or vegetable you like. While the penne pasta was cooking I added oil to a skillet over medium-high heat. Then I added the chicken until thoroughly cooked, stirred in the Marsala with Mushrooms & Garlic sauce and let it simmer for 5 minutes.
My husband was pretty skeptical about a meal that would be ready in only 15 minutes. He didn’t think it would taste good, but was pleasantly surprised with the taste. He was also happy that it wasn’t rich or salty. A lot of canned and pouched products have a salty taste, and this was not the case with the Marsala with Mushrooms & Garlic sauce. I’m usually not a fan of mushrooms, but I barely noticed them in the sauce. My only complaint is that it isn’t enough sauce for a pound of meat or for 4 servings, like the packaging says. It’s perfect for a 1/2 pound of meat and two servings though.
I love how quick this pasta dinner was to pull together. It took me only 30 minutes to prepare and cook dinner. That includes the time it took to clean and cut up the chicken breast. This is perfect for nights when you want a delicious meal without all the work. We really enjoyed our dinner, and can’t wait to try the other varieties.
