All cooks and bakers need recipes that are easy to make when they are short on time. Although this busy mom loves to cook and bake from scratch there are times when I just want to make something that’s quick and enjoyed by both adults and kids. So, let me tell you about how I ended up making Strawberry Rice Krispie treats last night.
Yesterday I stopped by the grocery store and picked up ingredients to make dinner. Before leaving I called home and asked if anyone needed anything. I was shocked when my husband told me no. I finished up my shopping and headed home. When I got home my little chefs in training helped unload the groceries and we started dinner. I love cooking with the kids. It’s always so much fun no matter how big or small a mess they make. And it’s a great way for us to spend time together.
A few hours later everyone was full and watching TV while I cleaned up the kitchen. From the living room I hear one of the kids say “Daddy, when is mom going to start baking?” I turn around to see a look on my husband’s face that matches mine. Yes, you guessed it confused! I walk in the living room to find out more. Turns out our little one signed me up to make a treat for today’s Valentine’s Day party at school.
With a job, blog and a house full of little ones and a husband that keeps me busy, I must admit that I forget things. I tend to forget things like the location of a restaurant, car keys, where I took my glasses off at, what page I last read in a book, but I never forget when I have to bake something for a school party. I have a spreadsheet for things like that so, as you might have guessed my little one forgot to tell me, and it looks like her teacher did too!
So what do I do when I need a quick, inexpensive snack for 20 kids? I turn to rice krispie treats. They are easy to make and the best part is that there is no baking involved.
Here is a twist on a classic treat I had the pleasure of making last night. With the addition of some almond flavor and Jell-O, these Strawberry Rice Krispie treats will make a perfect last minute Valentine’s Day treat!
Strawberry Rice Krispie Treats
- 2 tablespoons butter
- 3 cups mini marshmallows
- 2 tablespoons Strawberry JELL-O Gelatin
- 4 cups rice krispie cereal
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- Sprinkles (optional)
- Spray a cavity bar pan, muffin pan or mini cheesecake pan with nonstick cooking spray and set aside.
- In a large pot, melt butter over medium heat.
- Stir in marshmallows and reduce heat to medium low until melted and completely smooth.
- Stir in vanilla extract.
- Stir in almond extract.
- Stir in Strawberry JELL-O Gelatin.
- Remove from heat and stir in cereal.
- Press into prepared pan and cool to room temperature..
- Remove from pan once cooled.
- Top with sprinkles.
