I love to cook with fresh garlic and herbs. Garlic, basil, cilantro and parsley are all staples in my kitchen. But somedays I’m in a hurry and don’t feel like chopping. Or I check the crisper drawer and find that my garlic and herbs have taken a turn for the worse.

How many times have you bought a fresh bunch of cilantro or basil for a recipe, only to find it in your fridge just a few days later, wilted or dry? What a waste. I know I’m not the only one with this problem. But lucky for us, there’s a simple solution that’s quick and easy for those of us who never use up a bunch of herbs.

Enter Fresh Frozen Herbs, a great timesaver in the kitchen that helps prevent waste.

Fresh Frozen Herbs

In this recipe I used Basil, Cilantro, Parsley and Garlic. These ready-to-use frozen chopped herbs can go directly from the freezer into any dish. No thawing necessary. Simply remove the container from the freezer, give it a little shake and pour out your desired amount. Then put the rest back in the freezer. What an easy way to add flavor to a dish without having to plan ahead.

Garlic was my favorite of the four. It smells and taste just like fresh garlic. I was able to use it in three dishes, and recommend it for when you want to add instant flavor in a flash.

You might not think that chopping garlic and herbs are a lot of work, but some nights it can make all the difference on whether or not we have cereal or sandwiches for dinner. Call me lazy, but after a long day at work, I’d rather not deal with chopping herbs. Thanks to fresh frozen herbs my Mexican chicken bowl recipe was easier than ever.

I cleaned the chicken breast (about 1 pound) and cut them into bite size pieces. You could also use thighs.

I seasoned the chicken with a homemade taco seasoning. In small bowl, mix all of the ingredients below and store in airtight container.

Homemade Taco Seasoning

1/2 teaspoon black pepper
1 tablespoon chili powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon red pepper flakes
1/2 teaspoon onion powder
1/2 teaspoon paprika

I grabbed the garlic and some onions that I had previously chopped and froze out of the freezer. Then I let them sauté with a mixture of cooking oil and butter. Next I added the chicken to the skillet and let it cook until the meat is no longer pink.

While the chicken was cooking, I made three cups of cooked rice. Next I reheated some homemade pinto beans that I already had on hand. I always freeze leftover black beans and pinto beans for burritos and chicken bowls. You could also use canned pinto beans. To give the canned beans a little oomph add 1 tablespoon of vinegar and some onions and garlic. Then let them cook over medium heat.

Once everything is done cooking add the rice, beans and chicken to a bowl. Top with cilantro, and squeeze fresh lime juice over the entire dish.

The result – delicious mexican chicken bowls.

I didn’t include measurements for everything because I never measure when making this recipe. I just eyeball everything. Yes, this recipe is that easy. Enjoy!
