When I think of summer, I think of lemonade! It’s refreshing, cooling and the perfect summertime drink. Since it has been incredibly hot outside, my husband and I have been working on keeping cool this summer with some refreshing cocktails and mocktails. While ice cold water is a great thirst quencher it’s nice to have something different every now and then. This week we’ve been enjoying Strawberry Mint Lemonade.

This Strawberry Mint Lemonade recipe is a super simple and delicious way to cool off and chill on a hot summer day. What better way to quench your thirst on a hot day than with an ice cold glass of strawberry mint lemonade?

Strawberry Mint Lemonade

Ingredients:

2 cups water
1 cup sugar
1 pint fresh strawberries, hulled and halved
2 cups fresh lemon juice
1 tablespoon grated lemon peel
4-6 fresh mint leaves
6 cups cold water
Ice, for serving
Extra strawberries and mint, for garnish, optional

Directions

1. To make simple syrup bring 2 cups of water and the sugar to a boil in a medium pot. Reduce the heat and simmer, stirring occasionally, until the sugar dissolves. Add the mint, lemon juice and the lemon peel, stir and simmer for 1 minute. Remove from the heat and let cool. Once mixture is completely cool strain into a pitcher.

2. Puree the strawberries in a food processor or blender until almost liquid. Strain the strawberry puree through a cheesecloth or fine sieve to ensure seeds are removed and add to the pitcher with the simple syrup.

3. Add the 6 cups of cold water to the pitcher and stir well. Taste for desired sweetness. If necessary add more sugar and stir until well combined.

4. Chill in the refrigerator until ready to serve or, pour over ice and serve immediately.

  • Do not wash and prepare the strawberries until ready to use.
  • Be sure to let the simple syrup cool before adding to pitcher.
  • Use raw honey instead of sugar.
  • Instead of using a blender or food processor add the strawberries to pitcher and muddle with a wooden spoon.
