I believe the reason so many moms hit up drive thrus is because they get overwhelmed with the everyday life. Fried Brown Rice with Spicy Shrimp Recipe

Fried Brown Rice with Spicy Shrimp

Ingredients
1/2 pound shrimp, peeled and deveined,
2 bags cooked Success Jasmine Rice
4 tablespoons olive oil, divided
1/3 cup soy sauce
1/3 cup balsamic vinegar
1/3 cup brown sugar
1/4 cup honey
1/2 teaspoon onion powder
1 teaspoon Sriracha
1 teaspoon ginger powder
1 teaspoon ground pepper
2 cloves garlic, minced
3 eggs, lightly beaten
2-4 scallions, thinly sliced, white and green parts separated
1/2 cup thawed frozen peas
1/2 cup carrots, thinly sliced
1/2 orange bell pepper, thinly sliced (optional)
1/3 cup reserved sauce

Directions
1. In a large bowl, whisk together soy sauce, balsamic vinegar, brown sugar, honey, onion powder, Sriracha, ginger and pepper. Reserve 1/3 cup of sauce and set aside. Add shrimp and gently toss to coat. Set aside.

2. Preheat a wok over high heat for about 1 minute. Add 1 tbsp oil, swirl to coat the wok and add the eggs. Scramble eggs, about 1 minute. Remove from heat and transfer the eggs to a plate. Wipe the wok clean and return to the heat.

3. Heat 2 tablespoons oil in the wok. Add scallion whites and garlic and saute until fragrant, about 30 seconds. Add shrimp and saute until just cooked through. Remove shrimp with a slotted spoon and transfer to a plate.

4. Heat remaining oil in wok. Stir in the rice and press into the pan. Cook, stirring and pressing, until the rice is sizzling, about 2 minutes.

5. Return eggs and shrimp to wok, add peas, carrots, and bell peppers. Cook, stirring, until heated through, about 1 minute.

6. Garnish with the scallion greens and serve with remaining sauce, if desired.
