Strawberry and Spinach Salad with Strawberry Balsamic Vinaigrette

As many of you may know, I had strawberries coming out my ears. Check out my Strawberry Blueberry Lemonade and my Strawberry Moscow Mule to see just how many strawberries I have. This recipe is the last of my mini strawberry series, as I have finally run out of strawberries. I wanted to post an actual food recipe. Spring is here and I wanted to do something light and healthy. So what better than a Strawberry and Spinach Salad? What I love most about this recipe is that you can switch things around or add more to it for a unique salad every time you try it.

Strawberry and Spinach Salad Recipe

The other day I had someone ask me what makes a strawberry a good addition to a salad. The dressing plays a major factor in the salad. You would not want to mix a tangier dressing (like Ranch or Thousand Island) with a sweeter salad. Vinaigrettes (such as balsamic) and honey based dressings pair perfect with a spinach salad topped with fruits. Add in a type of nut (like almond) for a crunchier texture to salads. Any type of fruit would pair well with a salad and the perfect dressing.

This recipe is very easy to make and is perfect for a brunch, shower or party. The salad would be especially popular at events during the summer time too. The dressing can be prepared ahead of time, but I would suggest waiting until you are almost ready to serve the salad to cut the strawberries and assemble the salad.

Strawberry and Spinach Salad Recipe

Strawberry and Spinach Salad

Ingredients:

2 cups cooked chicken, chopped
4 cups spinach, washed and dried
2 cups strawberries, hulled and sliced
1/2 cup dried cranberries
1/4 cup crumbled feta

Strawberry Balsamic Vinaigrette

3/4 cup strawberries
1/4 cup balsamic vinegar
1/4 cup extra-virgin olive oil
1 tbsp Dijon mustard
1 clove garlic, minced
salt and ground black pepper to taste

Directions

For the dressing:

Add the strawberries, balsamic vinegar, olive oil, dijon mustard, garlic, salt and pepper to a food processor or blender and puree until smooth.

For the salad:

In a large bowl toss the chicken, spinach, strawberries, dried cranberries, and feta cheese. Lightly drizzle with dressing if serving immediately. If not, cover salad and store in the refrigerator along with dressing until ready to serve.

  • You can toss in any berry with this salad. Blueberries and raspberries are a good choice.
  • Top salad with slivered almonds for a little crunch.
