I love that this recipe for taco black bean quesadillas is made with ingredients that I always keep on hand. My favorite being Bush’s Beans, which are an inexpensive and convenient pantry staple. They are quick and easy and you can use them in a variety of meals. They are my protein of choice on most nights. I usually stock up on Bush’s Beans at Walmart as I know they will have the reduced sodium black beans at a great price!

Instead of cooking the taco black bean quesadillas in butter using a skillet, they are baked making them healthier and easier to feed the whole family or a crowd on game day! Every bite is bursting with flavor! Plus, these are so good they won’t even realize they are eating a meatless quesadilla. This recipe is great for lunch, last-minute meal dinners, tailgating, and parties.

Baked Taco Black Bean Quesadillas

Ingredients:

1 Can Bush’s Black Beans
1 Can Corn
1 Cup Salsa
1 Packet Taco Seasoning
Tortillas
Fiesta Blend Shredded Cheese

Directions

1. In a large pot, combine your beans, corn, salsa, and seasoning. Mix well and allow to come to a boil. Reduce heat and let simmer for a few minutes.

2. On a baking sheet, place two tortillas next to each other. Sprinkle with cheese.

3. Spoon your bean mixture over the top being careful to not get it too close to the edges of the tortilla. Be sure to not put too much as it will make it harder to eat if you do.

4. Sprinkle more cheese over the bean mixture you just spooned onto your tortilla and top with another tortilla.

5. Bake for 3-5 minutes at 350 degrees or until cheese is fully melted.

  • For a crispy quesadilla, grease a baking sheet with cooking spray or olive oil. Then bake for 10 minutes until the cheese is melted and the quesadilla is nice and crispy.
  • Let the filling cool. If you use hot filling, the steam might make the tortilla soggy.
