Peppermint Chocolate Thumbprint Cookies

Ingredients

  • 1/2 cup unsalted sweet cream butter softened
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 1 1/2 cup flour
  • 2/3 cup Hershey cocoa
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 bag of Hershey’s Kisses Candy Cane Mint Candy, 24 unwrapped
  • 1 Cup Godiva milk chocolate chips, melted

Directions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or Silpat baking mat. Set aside.
  2. In the bowl of your stand mixer, cream butter, and both sugars until light and fluffy. Add in eggs, one at a time. Next, add in peppermint extract. Mix until just combined.
  3. In a medium bowl, whisk together flour, cocoa, salt, baking powder and baking soda. Set aside.
  4. Gradually add flour mixture to butter mixture and beat until just combined.
  5. Using a small ice cream scoop, scoop the dough into your hands and roll into a ball.
  6. Place cookie balls on the prepared baking sheet, about 2 inches apart. Bake cookies for 8-10 minutes, or until cookies are set, but still soft in the center.
  7. Remove from the oven and immediately press a Hershey’s Kisses Candy Cane Mint Candy into the center of each cookie.
  8. Move to a cooling rack and drizzle the melted chocolate over the cookies.
  9. Allow cookies to cool completely on a wire rack.
