We eat a lot of chicken in my household, which means we often find ourselves in a dinner rut. I love how you can bake it, fry it, boil it and grill it, but after a while, everyone gets tired of the same ol’ food week after week. So here is a recipe for Baked Chicken with Pineapple Salsa to give you a variety in your meals.

This Baked Chicken with Pineapple Salsa is the perfect go to meal. What makes this dish so special is how the chicken is marinated and baked, along with fresh ingredients.

This meal is already very filling with the chicken and pineapple salsa, but I love to top it over a bed of rice. The salsa makes a perfect addition to the rice. If you want to make it healthier, you can use brown rice instead of white rice.

Baked Chicken with Pineapple Salsa


For the Chicken:

  • 4 boneless skinless chicken breast
  • 1 Tablespoon lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 1/2 teaspoon honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic, minced
  • salt and pepper, to taste

For the Salsa:

  • 1-2 medium avocados, diced
  • 1 cup pineapples, diced
  • 1/2 cup chopped onions
  • 2 tablespoons garlic
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon fresh lime juice
  • 4 Tablespoon chopped cilantro


Making The Chicken:

  1. Place chicken on a cutting board and cover with a sheet of heavy plastic wrap. Using a meat tenderizer tool pound the chicken to a even thickness.
  2. Place chicken in a large resealable plastic bag. Set aside.
  3. In a small bowl, combine the lime zest, lime juice, olive oil, honey, cilantro, and garlic. Stir until well combined.
  4. Pour the marinade over the chicken. Seal up the bag and turn from side to side to make sure all of the chicken is well coated. Place the plastic bag on a sheet pan and put into the refrigerator for at least 2 hours.
  5. One chicken is done marinating, preheat the oven to 400F.
  6. Place chicken on either a baking pan covered in parchment paper or in a cast iron pan. Bake chicken for 20 minutes.
  7. Remove chicken from the oven and transfer to a plate.
  8. In a medium bowl, toss together avocado, pineapple, onion, garlic, ginger and lime juice. Then season with salt and pepper to taste.
  9. Scoop the salsa and place on top of the chicken and sprinkle with chopped cilantro. Serve immediately.

  • Use thin-cut chicken breasts if you are short on time. They will cook faster and more evenly.
  • Marinating the chicken overnight will produce more flavor.
  • Cook the chicken until internal temperatures reach 165F. Don’t overcook or undercook.
