Oven Baked Chicken Taquitos

I know all too well how easy it is to get overwhelmed with my busy schedule and then realize after I’ve spent the day running around doing errands, chores, etc., that I still have to head to the kitchen and put together a meal for my family. When these types of days come and I find myself frazzled with the very thought of throwing together a home cooked meal, I turn to my recipe box for help.

Baked Chicken Taquitos


For the Filling:

  • 1 cup Green Verde salsa
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon garlic salt
  • 3 tablespoons cilantro, finely chopped
  • 1/4 cup diced yellow onions
  • 2 cups rotisserie chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup Colby Jack cheese, shredded
  • corn or flour tortillas, warmed
  • Olive oil or cooking spray

For the Dip:

  • 2 cups sour cream
  • Juice of 1/2 lime
  • 3 tablespoons green verde sauce
  • 2 teaspoons garlic salt


For the Filling:

1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Brush with a little olive oil or nonstick cooking spray and set aside.

2. In a large bowl, combine the Green Verde salsa, lime juice, cumin, chili powder and the garlic salt. Mix well.

3. Add cilantro, diced onions, chicken, black beans and the cheese. Stir to combine.

4. Heat tortillas slightly to make them pliable.

5. Lay out a tortilla on a flat workspace. Spoon 2-3 tablespoons of the chicken mixture down the center of the tortilla. Top with more cheese if you want it extra cheesy. Roll tightly and place seam side down on the prepared baking sheet. Repeat with each tortilla until done.

6. Brush all rolled tortillas with a little olive oil or spray lightly with cooking spray.

7. Bake for 12-15 minutes, or until the edges of the tortilla start to brown.

8. Remove from the oven and allow the taquitos to cool for a few minutes. Serve with the dip below.

For the Dip:

1. In a small bowl, combine the sour cream, lime juice, Green Verde sauce, and the garlic salt. Stir well to blend all ingredients together. Cover and place the dip in the refrigerator until ready to serve.

  • Store taquitos in an airtight container for up to 3 days in the refrigerator.
  • Reheat taquitos in the microwave or bake in a 350 degree oven until heated through, about 5-7 minutes.
  • To freeze: Once baked taquitos are completely cooled, place them in a single layer on a baking sheet and freeze. Once frozen, place taquitos in a freezer bag and keep in the freezer until ready to eat. When ready to reheat, remove from freezer bag and bake in 375 degree oven for 10-15 minutes or until heated through.
