  • 5 Pounds Yukon Potatoes
  • 1 Large Sweet Onion
  • 3 Ounces Chopped Green Onion
  • 4-5 cups vegetable broth or Water
  • 1 Can Evaporated Milk
  • 1 Pound Velveeta Cheese or 3 cups shredded medium cheddar cheese
  • 1/2 Cup Butter
  • Salt and Pepper


1. Slice your cheese, onion, and potatoes into small or large chunks. (We do large squares with everything but do what you prefer.)

2. Place your potatoes and both types of onions in your slow cooker and sprinkle with salt and pepper.

3. Fill the slow cooker with the broth or water until almost covering contents.

4. Cook on high for about 5 hours or until the potatoes are mostly soft.

5. Add cheese, milk, and butter at this point and continue to cook on high for about 20 more minutes and then reduce to the lowest setting for about 30 minutes to an hour.
