These chocolate mint whoopie pies start with a devil’s food cake mix that you prepare according to the package and add an additional cup of flour. You then just drop spoonfuls of cake batter on a cookie sheet and bake. Once the cookies are cool, you add the easy to make the filling. You can then roll the whoopie pies in crushed cookies or candies.

You won’t believe how quickly and easily these go together. You’ll soon be making these in every flavor imaginable. And there are so many flavor combinations you could create. You could do strawberry cake mix with vanilla frosting or even lemon cake with strawberry frosting. The traditional whoopie pie though is chocolate cake with vanilla filling.

For the Cookies:

  • 1 box of Devil’s Food cake mix, plus ingredients listed on the back of the package
  • 1/2 Cup of Flour
  • Crushed Hershey’s Cookie Layer Crunch Bars or Andes Mints

For the Filling:

8 tablespoon unsalted butter, room temperature
8 ounces cream cheese, room temperature
2 cups powdered sugar
1/2 jar of marshmallow cream
1 teaspoon peppermint extract (not mint)


For the Cookies:

1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.

2. In a medium bowl, prepare the Devil’s Food Cake Mix according to the box. Add 1 cup of flour to make the mixture thicker and mix well.

3. Using a spoon or cookie scoop, drop a heaping tablespoon of batter onto the prepared baking sheet, about 2 inches apart.

4. Bake for 12-15 minutes.

5. Remove from the oven and let the cookies cool completely on the baking sheet.

6. While the cookies are cooling chop up the Hershey’s Cookie Layer Crunch Bars or Andes Mints. Place them on a plate and set aside.

For the filling:

1. In a medium bowl beat butter and cream cheese beating until smooth. Add powdered sugar, marshmallow cream, and peppermint extract. Beat until smooth.

2. Once the cookies have cooled completely, drop a large dollop of the filling onto the flat side of half of the cookies, and top with the remaining cookies.

3. Refrigerate whoopie pies for at least 30 minutes before rolling the sides in the cookies or candy. Repeat until all whoopie pies have been rolled.
