Fall Harvest Salad with Pomegranate Vinaigrette

I can honestly not think of a bad time for salad. All summer long we use the hot weather as an excuse to indulge in a lot of salads, however now that summer is over we still can’t seem to stop whipping up new versions to try. Our latest test subject, for example, is this recipe for Harvest Salad with Pomegranate Vinaigrette. Harvest Salad


  • 2 boneless, skinless chicken breasts
  • 1/2 olive oil
  • 1 cup fresh butternut squash
  • 1/2 cup dried cranberries
  • 1/3 cup chopped walnuts
  • 1 large apple
  • 1/4 cup feta cheese
  • 1 1/2 cup fresh kale
  • 1 1/2 cups fresh spinach
  • 1/2 cup shredded carrots


  1. Rinse and dry spinach and kale, place in bowl.
  2. Grill the chicken breasts. Set aside to cool.
  3. Drizzle a little olive oil in your skillet add the butternut squash cooking until slightly browned and tender.
  4. Remove from skillet and set aside to cool.
  5. Finely slice the apple, place in bowl.
  6. Add the cranberries, walnuts and feta cheese to the bowl.
  7. Finely chop the grilled chicken into pieces.
  8. Add the chicken and butternut squash to the salad.
  9. Toss then drizzle with Pomegranate vinaigrette and serve.

Pomegranate Vinaigrette

Vinaigrette Ingredients:

  • 1/2 cup pomegranate juice
  • 1/4 cup red-wine vinegar
  • 2 tablespoon agave
  • 1/2 cup canola oil
  • Salt and pepper to taste


  1. In a small bowl whisk together the pomegranate juice, vinegar and agave. Set aside for at least 10 minutes.
  2. Add in the oil, salt & pepper to taste.
  3. Whisk all ingredients together until combined.
  4. Cover and store in the refrigerator until served.

Harvest Salad with Pomegranate Vinaigrette Tips

  • You can toss in any fruit you like with this salad. Ripe pears are a good choice.
  • Use lemon juice to keep sliced apples or pears from turning brown.
