Spinach and Feta Chicken Quesadillas Recipe

Ahh, quesadillas. I love them, especially Spinach and Feta Chicken Quesadillas. Just like anyone, I love to cook a filling dinner that is not only healthy but is also quick to make. When I am making my meal plan for the week, I try to use ingredients that I already have on hand. The other day when I was out grocery shopping I got a great deal on chicken breast, so there is a ton in my freezer. With all that chicken, this recipe was a perfect way to use some of it up. We can’t have a quesadilla without cheese, so since there was mozzarella and feta left in my refrigerator I added it as well.

The chicken can be prepared ahead of time, making less time in the kitchen needed to prepare this meal. If you do not have chicken breast on hand, you can also use rotisserie just as easily. After you assemble these easy quesadillas and cook for a few minutes you have a dish that your family will love and request seconds of. The Spinach and Feta Chicken Quesadillas are filling on their own, but you can serve them with a small spinach salad or fresh tomatoes. Also, I like to slice up a few avocados to enjoy along with my quesadillas.

Making quesadillas is about as easy as it comes! Just follow these simple directions and let’s get cooking.

Spinach and Feta Chicken Quesadillas


  • 2 ounces cream cheese, softened
  • salt and pepper, to taste
  • 4 cloves garlic, minced
  • 6 flour tortillas
  • 3 cups of mozzarella, shredded
  • 2 cups of feta, crumbled
  • 2 cups of cooked chicken, shredded
  • 1 cup spinach, steamed and squeezed to drain
  • 1 Red or Orange bell pepper, sliced and seeds removed
  • Butter or Canola oil, use just enough to coat the bottom of your skillet


  1. In a small bowl, combine the cream cheese, garlic, salt, and pepper.
  2. Divide the cream cheese mixture between 6 tortillas and spread in a thin layer.
  3. Top 3 tortillas with mozzarella, feta, chicken, spinach, and peppers. Top with remaining 3 tortillas and press lightly.
  4. Melt a touch of butter or oil in a large skillet.
  5. Place 1 quesadilla in skillet.
  6. Cook over medium heat, about 2 minutes on each side, or until the tortilla is golden brown on each side.
  7. Remove from the skillet and transfer to a cutting board. Cut quesadilla into wedges.
  8. Wipe the pan clean and repeat steps above. Serve warm.

  • You can place the cooked quesadillas in the oven on 200F for up to 30 minutes to keep warm.
  • Folding a tortilla in half is easier to flip than a quesadilla made with two tortillas.
  • Cut into wedges using a pizza cutter.
  • Save time when making multiple quesadillas by using a grill pan.
