Three Cheese Garlic Mashed Potatoes Recipe

I love to cook, and I love kitchen gadgets, so when Good Cook recently sent me some of their items to try out it was a win win in my book. After learning that I had to create a one pot comfort food dish, I knew it would involve potatoes. Potatoes are one of my favorite comfort foods! And my family loves them too. Whether it’s a baked potato, potato soup or mashed potatoes these dishes always seem to put a smile on their faces. So yesterday I decided to go with a family favorite and cooked my three cheese garlic mashed potatoes recipe for dinner.

Mashed Potatoes is one of those comfort foods that everyone makes a little different. Throughout the years I’ve made them with apples, ginger, carrots, and lots of other yummy ingredients. Today I’m going to show you how to make it with three cheeses that are great for melting.

Begin by thoroughly scrubbing the potatoes to remove any dirt, then rinse and cut in quarters. In a medium pot add the potatoes and cover with cold water by 2 inches. Bring to a boil over medium heat, then reduce the heat and simmer until slightly tender, about 15 minutes.

Drain the potatoes and return them to the dry pot and hot burner that is turned off. This will help absorb any moisture left in the pot to help prevent potatoes from being watery. Let the potatoes sit on the burner for 5-10 minutes uncovered.

Add garlic, sour cream and butter. Stir the potatoes until the ingredients are blended. Mash the potatoes a little so that you no longer have large chunks of potatoes. Mix in the heavy cream, a little at a time, until the potatoes are the desired consistency. Add the pepper and give the potatoes a quick stir.

Three Cheese Garlic Mashed Potatoes

Ingredients
3 pounds red potatoes, scrubbed and quartered
3/4 cup unsalted butter, room temperature
1/4 cup sour cream, room temperature
1/2 cup heavy cream, plus more if needed
1/2 teaspoon ground black pepper
1/2 cup muenster cheese
1/2 cup colby jack cheese
1/2 cup cheddar cheese
3 teaspoons finely minced garlic, plus more if you like a lot of garlic
Plus more cheese for serving (optional)
Green onions or chives for serving (optional)

7. Using a wooden spoon or rubber spatula stir in the three cheeses.

8. Transfer to a serving bowl. Serve immediately or store in the refrigerator covered until ready to serve.

Three Cheese Garlic Mashed Potatoes Tips

  • If you like smooth mashed potatoes, give them a good mashing. Keep in mind that it might take a few minutes to get them to the consistency you want.
  • Add more heavy cream if you like smooth and creamy mashed potatoes.
  • Russet potatoes and Yukon Golds are also good choices to use for this recipe.
  • Peel the potatoes and cut them up a day ahead. Make sure that you put them in a pot or container filled with water to cover and keep them from browning. Store in the refrigerator until you are ready to boil them.
